About This Dish

This is another quick supper that's really easy and hassle free!

What You'll Need

  • 1 kg frozen or fresh spinach
  • 2 tins Itallian peeled tomato's or fresh red ones
  • 6 cloves garlic, chopped
  • Sea salt, to taste
  • IP Lemon Pepper
  • mozzarella / goats cheese / feta
  • 3 large split chicken breasts
  • Extra virgin olive oil, as needed
  • 2-3 large portobello mushroom caps, sliced
  • Balsamic vinegar, as needed
  • 2 cups cooked brown basmati rice

How To Make It

Preheat oven to 180 C.

prepare your spinach: thaw if frozen, wash is fresh. Chop and scatter half of it in the bottom of a large baking dish.

Sprinkle half of the tomatoes and garlic on top. Season with sea salt and Lemon Pepper and scatter half the cheeses

In the meantime, heat up a large pan and cook the chicken breasts in a little olive oil. Season with sea salt and Lemon Pepper then remove the chicken from the pan and cut it into bite-size pieces.

Saute the portobello slices in a little olive oil and good splash of balsamic vinegar, till tender. Add the cooked chicken and the portobellos to the spinach mixture. Spoon on the rice over this then layer the remaining ingredients adding the rest of the cheeses to the top.

Put the pan in the oven. Bake until done, about 25 to 30 minutes, till heated through and bubbling. Serves four - six.
