A Traditional Dessert dish from my Algarve.
What You'll Need
- 6 firm ripe pears
- 1 bottle of red dry wine
- 300gr white sugar
- 1 cinnamon stick
- 4 cloves
How To Make It
Peal pears keeping stalk. In a pot only big enough to keep all 6 pears upright, add red wine and sugar.
Leave to boil in medium heat. As the wine starts boiling add pears, making sure that all fruit is covered with the boiling wine, if not add some more wine. Add cinnamon stick and cloves. Cover pot just leaving a small space to breath. Boil till fruit become soft but keeping the shape.
Test with toothpick. When pears are ready, remove from wine syrup into a serving bowl. Allow the wine syrup to boil for an extra 10 minutes to thicken.
Drizzle pears with wine syrup, let it cool down and place in fridge. Serve with vanilla ice.
Enjoy with a glass of good Port wine.
