About This Dish
A Traditional Meat dish from my Algarve.
What You'll Need
- 1.5kg Lamb
- 1dl Olive Oil
- 4 Soup spoons of Butter
- Parsley
- 4 Garlic Cloves
- 1dl Vinegar
- 2.5dl Dry White Wine
- 6 Whole Black Pepper
- 4 Cloves
- 800gr Potatoes
- 2 Bay Leaves
- 1 Soup spoon Paprika
- 3 Soup spoons coarse Salt
How To Make It
Clean lamb of fat. Peel garlic cloves and bruise them with the coarse salt and a bit of olive oil, to a paste.
Add paprika and half of the wine, mixing well. Coat the lamb with the obtained paste. Into a roasting pot add the parsley, bay leaves, the pepper grains, the cloves, vinegar, remaining wine, butter and a bit of water.
Mix all well. Add lamb and coat with pot ingredients.
Leave to rest in cool place for 4 hours. Cover pot with lid and place into oven preheated to 160 degrees, and let cook for 25 minutes.
Wash and peel potatoes, cut in quarters. Add to the roasting pot and allow roasting for an extra 35 minutes.
Take pot from oven and leave to rest for 10 minutes before sprinkling with parsley and serve.
Enjoy with a good Shiraz wine.
